It's fairly common knowledge that creating vegetables that could travel long distance was like creating the perfect Twinkie. Flavor and nutritional value were sacrificed for convenience, to create the ideal packing material...er...packable material. From the 1950's on, most kids grew up with plastic-like veggies that traveled well and tasted like Grandpa's dirty socks, only not as flavorful. If you've picked up this book, however, I probably don't need to convince you that home-grown veggies are not only tasty, they're better for you. I didn't realize how important fresh vegetables were until my health took a nose dive.
